Busy Life ≠ Crappy Food
So…we are busy! That is a true statement, and I feel like that fits most people these days. With that, comes the question, “How am I supposed to make a healthy dinner for everyone in between the activities?” Almost two years ago, I agreed to take part in a biggest loser competition like many people do at the New Year. However, I wasn’t really expecting much out of it. I was in it because my friends were doing it, and I thought that I might get a recipe or two from it. I also thought it might motivate me to exercise (check out: “How I became a runner“). Well…it did all of that and more!
I learned amazing recipes from the group, found a couple of sites that I can now use regularly, and my husband got me a great cookbook that we still use. However, the biggest lesson learned was that I needed to cook a couple of recipes on the weekend that can last us through the week. At first, I was cooking 4-5 meals so we could have something different every night. However, I found that we were throwing food away because it was too many meals. We really only needed 2-3 meals, and they lasted us all week. AMAZING!!!
Cooking for the week on the weekends has my family eating the healthy meals that we were not getting. In the past, I would get home and realize that I didn’t have the time to prep, cook, and clean up before that night’s activities. Yes, I tried the crock pot recipes. For some reason, I would never be home in time so they were always burnt. Ugh! Instead, I found us going to the countless fast food restaurants because they were quick and easy. Not only did it hurt the pocketbook, it wasn”t great for the waistline either. Of course, I can’t forget that it wasn’t one bit healthy for us. (Well, not what I was picking, french fries and a Large Coke.)
I knew I had to change our ways! I started finding recipes for meals that were healthy and produced leftovers. Pulling Sincerely Him into the mix, we started cooking on Saturdays or Sundays for the week. Happy to say that going on two years later, we are still doing it. Now, I won’t lie and say that we haven’t missed a week or two, but for the most part, we have kept it up. A lot of the time, it is just making double of something that we like. We freeze it and pull it out in a future week. It can be that simple! We are now saving money, and I lost weight (that is most important part…right?). Oh yeah, we now have healthy food which is good for us too.
The biggest problem is always, “What to make?” Below you will find some recipes, a link to a great cookbook, and some great sites that I love.
